Beef Philly taste with out the bread carbs! This recipe is gluten free and dairy free.

.75 pound of seasoned roast beef
3 large green peppers
1 large red pepper
3 large mushrooms or 1 cup diced mushrooms
1 bundle of green onions
1.5 cups Violife mozzarella shreds
6 slices Violife Smoked Provolone slices
1/4 cup vegan mayo
2 tbsp roasted garlic oil
Salt and pepper to taste
Preheat oven to 400°F
Cut the green peppers in half and deseed. Set aside.
Slice your roast beef into strips ( pictured above).
Diced the red pepper, mushrooms and onions.
In a medium bowl add beef strips, red pepper, mushrooms, onions, mozzarella shreds, mayo, garlic oil, salt and pepper. Mix until everything is evenly coated as pictured above.
Stuff the green peppers with the beef mixture and pack down.
Bake for 20 minutes.
Place the provolone slices on top of the stuffed green peppers and bake for an additional 5 minutes.
