Gluten and dairy free recipe. Put a new twist on your chicken dinner.
4 boneless skinless chicken breasts
1 cup chopped fresh spinach
1 8oz room temperature dairy free cream cheese
1 cup dairy free cheddar shreds
1/4 cup chopped green onion
1/2 tsp salt
1/2 tsp black pepper
1 large jalapeño diced (deseed if you want it mild)
White truffle oil
Preheat oven to 400°F
In a mixing bowl add cream cheese, spinach, cheddar shreds, green onion, salt, black pepper and jalapeño. Divide the cream cheese mixture into four sections. Set aside.
Next use a meat tenderizer to flatten out the chicken.
Fill the chicken with the cream cheese mixture and roll up tightly.
Lightly brush on white truffle oil on rolled up chicken breasts.
Lightly sprinkle on season salt and parsley flakes.
Bake for 25-30 minutes. Enjoy!
