Truffle French Fries

Can you say yum? This is a great side dish for kids and adults. Not to mention its gluten-free and dairy free.


Prep time 10 minutes

Cook time 40 minutes

Total time 50 minutes

Serves 4 as a side dish


Ingredients

1 tbps canola oil

1/2 tbsp white truffle oil

Two large russet potatoes

2 tbsp chopped parsley

1/2 cup dairy free mozzarella shreds (chop into small pieces)

salt and black pepper to taste


Directions

Preheat oven to 425°F

Wash potatoes

Cut potatoes into thin strips

Toss strips in canola oil

Lay out flat on baking sheet

Bake for 30-40 minutes or until crispy. Make sure to flip every 10 minutes so one side does not burn. Remember you are baking these fries so they won't get completely crispy like you would if you were using a fryer.

Lightly sprinkle salt pepper on fries. Add the truffle oil, mozzarella and parsley. Toss until evenly coated with the ingredients and bake for additional 3 minutes. Enjoy!
