Mhmmm fresh basil is delicious with gourd turkey and egg plant.
I had a large amount of eggplants that were given to me and this is one of the fun things I did with the egg plants. I love ground turkey because it is good for you and gives things a lighter taste. This recipe is perfect if you are on a Low FODMAP diet because of IBS or if you just have a sensitivity to gluten or lactose.
Ingredients
1 cup cooked ground turkey
1 cup Prego Italian sauce sensitive recipe
2 tablespoon lactose free sour cream
3/4 cup lactose free mozzarella cheese
1/4 cup chopped tomatoes
1/4 cup fresh chopped spinach
2.5 TBSP Fresh chopped basil
1 large egg plant
1/4 cup chopped green onions; only the green part
salt and pepper to taste
Directions
Preheat oven to 375°F, spray baking sheet, cut eggplant and put flat on baking sheet, mix the above measured ingredients in a bowl, place mixture in center of each eggplant piece and squish down to cover most of eggplant surface, bake for 15 minutes, sprinkle on some lactose free mozzarella cheese, bake for additional 5-6 minutes and ENJOY!!!
