Creamy Bacon Chicken Pasta

Gluten-free and dairy free.

I like to cook as efficient as I can. Before you start the sauce cook your gluten-free penne pasta. While the pasta is cooking chop up your cooked rotisserie chicken and cooked bacon. Do the dishes while you are in-between steps. On a side note, I love going to Costco and getting their rotisserie chicken. It is so easy to use in recipes and the best part, its already cooked!


Ingredients

  • 1 1/2 cups chopped cooked bacon

  • 2 cups chopped cooked rotisserie chicken

  • 2 cups cooked penne pasta


Sauce

  • 1/2 cup water

  • 1/3 cup almond milk

  • 1 1/2 tablespoons cornstarch

  • 1 tablespoon chicken broth base and seasoning

  • 1/2 teaspoon ground black pepper

  • 1/2 teaspoon basil leaves

  • Salt to taste


Directions

  • Mix all sauce ingredients in a bowl and set aside

  • In a medium pot melt 1 tablespoon vegan butter, 1/8 cup dairy free cream cheese,1/4 cup dairy free sour cream

  • Add in sauce mixture and whisk on medium heat until it gets thick (if it gets too thick add more almond milk)

  • Add 1 1/2 cups chopped cooked bacon

  • 2 cups chopped cooked rotisserie chicken 2 cups cooked penne pasta
